Nigella's Blueberry Cornmeal Muffins
I have recently got back into baking again. I realise there is no way we are going to be a biscuit and cake free home, but I at least feel better letting my kids (and me) eat this stuff if some of it has been made myself so I know exactly what is in it.
These muffins, from Nigella's 'Kitchen' book, have been a hit. They are very quick and easy to make - I can easily do them while the kids are having lunch or dinner. I love the cornmeal taste (I used the cornmeal/polenta from the Caribbean section in Sainsburys. I tried both the coarse and fine types and they both work but the fine was definitely better - which is exactly what the Sainsburys girl advised when I was trying to track the ingredient down!)
Nigella is becoming a favourite of mine. I only have one of her books - Kitchen - but I like her approach and lots of the recipes are straightforward which I like (and need..).

I really think she does firmly deserve her place as a great cookbook writer.
I love her books, the recipies have obviously been tested to distruction as they don't seem to have the tendency to be unclear as some other books can be.
we only have one (can't even remember the name of it) and there are some recipes from there that I can make without referring to it, I've made them so many times over the years. If you can ignore the purple prose she uses to describe the food, she is excellent :)
